Stars are made of helium and hydrogen at first (along with some smaller percentages of metals), what happens in the stars is nuclear fusion where the particles of these elements combine to form heavier ones whilst outputting energy .. it’s ‘burning’ it’s fuel. As this process goes on more and more heavy elements are introduced which when undergoing nuclear fusion don’t produce as much energy as they get older and older!
